BULGAR WHEAT SALAD - FRESH - LUNCH FOR ONE

BULGAR WHEAT SALAD

Lovely and fresh tasting with LOW GI and LOW FAT - Good FIBRE =]

Ingredients

20g Bulgar Wheat
Hot vegtable stock ( made up as 200ml hot water with one veg stock cube)
Chunk of Cucumber - without the seeds - small chucks
5 cherry tomatoes - cut in half
lemon juice - just enough (tsp)
Bunch of Fresh Mint
1 Spring Onion - finely chopped
1 grated carrot
cup of lettuce

20g Kidney beans (optional for added protein)

Method

1. Weigh out Bulgar Wheat into a bowl and add enough stock to cover and cover with cling film and leave for 5 mins.

2. Meanwhile cut up the salad.

3. Microwave Bulgar on high for 1 min. Stand for 1 min. Microwave on medium for 30 secs. Add rest of the ingredients and lemon juice.

4. Add sprinkling of pepper and kidney beans (optional) and serve.
