Asian Red Cabbage Salad... Oh and leftover tandoori cauli!


Asian Red Cabbage Slaw -adapted from the recipe on the HOLLOW LEGS BLOG for ASIAN RED CABBAGE SLAW

Ingredients
1/2 a red cabbage 
2 carrots 
2 spring onions 
2 inches ginger, minced 
1/2 red birds eye chilli 
1 lemon
2 tbsp rice vinegar 
1 tbsp light soy sauce 
1 red Pepper, sliced
Baby Sweetcorn, sliced
Royal gala apple, julienne
4 Almonds, chopped
1/2 cup frozen Green Beans

Method

1. In a large small bowl, add the soy sauce to the juice of the lemon, the chopped up chilli, minced ginger and vinegar. Mix well. 

2. Halve the red cabbage and remove the tough white core. Shred finely and add to a steamer basket. Julienne the carrots and slice the spring onion. Add to the cabbage. Steam cabbage until just warmed through and not over cooked, still with a slight crisp. Add the additional ingredients of pepper, sweetcorn, apple and steam a couple of mins longer. 

3. Once cooked, remove the steamer water and transfer the cabbage to the saucepan. Toss well with the dressing and leave to warm through for 5 minutes before serving. Add the green beans which I had cooked quickly in the microwave. Mix through again and serve.
