Coconut, Peanut Butter, Nutella & Cacao Nib Granola Bars


Coconut, Peanut Butter, Nutella & Cacao Nib Granola Bars – adapted from the Taste book website for 'Gorgeous granola fruit bowl'

Ingredients
175g rolled jumbo oats
120g honey
28g coconut oil
1/4 cup desiccated coconut 
Heaped Tbsp Peanut Butter
50g Booja Booja Cacao Nibs
Heaped Tbsp Nutella

Method
1. Preheat oven to 160°c
2.In a saucepan, melt the honey and coconut oil over a medium heat. Add the peanut butter. Remove from the heat and add in the rolled oats, desiccated coconut & cacao nibs. 
4.Pour the mixture onto a large baking tray and spread evenly.
5.Place the tray into the oven and bake for 30 mins or until toasted and golden.
6.In the meantime, place a tbsp of coconut to a Tbsp of reserved cacao nibs. 
7.Once the granola is baked, remove from the oven and drizzle over another tbsp of nutella and peanut butter warmed in the microwave. Sprinkle over the coconut & cacao nib mixture, slice into squares/rectangles and leave to cool to harden up.
8. I topped with my pineapple flowers I had made earlier this morning.
