Monday Smoothie Bowl - Coconut water challenge!



Blueberry & Raspberry Smoothie Bowl 

Ingredients
100g Frozen Raspberries
40g Frozen blueberries
250ml Pure natural coconut water (vita coco)
1 Dried apricot
2 tbsp Pomegranate seeds
Cinnamon dusting

Method

1. Place the raspberries into the small nut mill attachment for the food processor. Add 1/2 cup of coconut water and blend until smooth. Pour into a small bowl.

2. Repeat with the blueberries and add 1 apricot. Blend until smooth.

3. Pour the blueberry puree into the bowl - I like how the two colours look together and begin experimenting with designs (dots and heart ect =]).

4. Top the smoothie bowl with 2 tbsp of pomegranate seeds and a sprinkling of ground cinnamon. Serve.
