I'm on a roll today, it's only challenge lunch! 'lettuce, carrot, egg and hummous wraps'


Well, there isn't really a recipe for this one as it is sort of a last minute make shift meal. It was inspired however by this recipe found on pinterest for 'Healthy turkey & cucumber wraps'.

Egg, Carrot and hummus lettuce wraps

Ingredients:
4 leaves iceberg lettuce
1 Egg white
Grated carrot
Green pepper slices
handful of beansprouts
slither of hummus

Directions

1 Top a lettuce leaf with hummus, cooked egg white, green pepper slices, beansprouts and hummus then, as if it were a sandwich, wrap it up with another piece of lettuce.
Repeat with the remaining ingredients.
Secure with a cocktail stick.

2 *serving suggestion This can be done with a variety of ingredients, such as tomatoes, avocados or peppers, as well as salmon, chicken, lamb or prawns.

White cheeses, herbs, garlic, lemon juice, paprika, turmeric, oregano, all work too. Whatever you have in your fridge!
