Tomato & Red Lentil Soup – From the ‘Detox’ book
Ingredients
1.5 cups of water
½ Red onion, chopped
3 sticks of celery, sliced
4 carrots, sliced
1 garlic clove sliced
5 tbsp chopped tomatoes & herbs
in juice
Tsp Sage
¼ Tsp Hot chili pepper
Tsp thyme
Method
1.
In a medium saucepan, boil the water
and add the lentils, onion, celery and carrot and simmer for 30 mins.

Add the tomatoes for the last
few minutes and stir. Blend with a hand blender for a touch to remain some
veggies intact.
3.
Top the soup with some chopped yellow
pepper and ground pepper and serve immediately.
