Lunchtime change... Tomato and Red lentil soup - Detox book

Tomato & Red Lentil Soup – From the ‘Detox’ book


1.5 cups of water
½ Red onion, chopped
3 sticks of celery, sliced
4 carrots, sliced
1 garlic clove sliced
5 tbsp chopped tomatoes & herbs in juice
Tsp Sage
¼ Tsp Hot chili pepper
Tsp thyme


1.    In a medium saucepan, boil the water and add the lentils, onion, celery and carrot and simmer for 30 mins.

2.     Add the tomatoes for the last few minutes and stir. Blend with a hand blender for a touch to remain some veggies intact.

3.    Top the soup with some chopped yellow pepper and ground pepper and serve immediately.
