My homemade batch of Root veg soup with mushrooms and kale

Root veg soup with mushrooms and kale - adapted from 'BBC GOOD FOOD'

1/2 Onion, finely chopped
1 leek, sliced
200g carrots, sliced
1 swede, sliced
1l vegetable stock
1 bay leaf
1 tsp thyme
1 tsp rosemary


1. In a large saucepan, add the shallots and onion and cook for 5 mins until soft. Add herbs, carrot and swede. Pour in the stock and bring to the boil, reduce the heat and simmer for about 20 mins until the vegetables are soft. 

2. Leave to cool. Blend with the hand blender and add kale, celery and mushrooms and simmer for a further 10 mins.
